I work the early shift at a family butcher shop in Slavic Village, Cleveland. 3:30 alarm, elbow-deep in pork shoulder by five. My babička taught me to make kolache and to never apologize for taking up space. I wrestled in high school, quit at sixteen to work, and I have the ear to prove it. The old man who owns the place is retiring and I want to buy it, which means a loan officer, a written pitch, and one paragraph about myself I can't seem to write. Come at me with your worst take. I'll bring the rebuttal.
